Ingredients (2 big servings – about 879 kcal or 4 small servings)

  • 500g red beet (cooked, minced)
  • 45 g pistachios or other nuts
  • 160 g Blue cheese
  • 150g kale (raw)
  • 420 g fresh pears
  • 4 slices whole grain bread
  • dressing:
    • pepper
    • salt
    • 20g olive oil
    • 50 ml lemon juice

Procedure:

  • cut bluecheese, red beet and pears
  • Mix all ingreadients except the bread together
  • add dressing
  • serve the salad with per serving two slices of bread
