Spinach Curry

Ingredients ( 4 servings – around 960 kcal):

  • 200g Buckwheat
  • 320 vegetarian chicken pieces
  • 2 cans coconut milk
  • 1 onion
  • 1 red chilli pepper
  • 5 garlic cloves
  • 500g brokkoli (cooked)
  • 1 courgette
  • 454 g Spinach
  • 4 peeled fresh oranges
  • 1 bell pepper
  • 65 g red curry paste
  • 2 tablespoon olive oil
  • 150 ml lemon juice
  • 60 g Cashew (about 2 hands)

Procedure:

  • cook the buckwheat until he is done
  • cut onion, garlic and chillipepper and fry them in the oil in a pan
  • add the vegetarian chicken pieces
  • when they are slightly brown add the courgette – fry as well
  • add coconut milk, currypaste and lemon juice – wait until mixture boils
  • now add the spinach,bell pepper, brokoli,buckwheat and cashews
  • mix everything together and let it cook on low heat for another 10 min and then serve
