Stamppot with kale

Ingredients ( 4 servings – each around 650 kcal):

  • 1 kg Potatoes
  • 300g kale (fresh)
  • 200 g Feta
  • 350 g Soyjoghurt
  • 5 garlic cloves
  • 1 onion
  • 20 g olive oil ( 2 tablespoon)
  • 1 Bell pepper
  • 1 Chillipepper
  • 60g sundried tomatoes without oil (miced)
  • 60 g Macadamia (minced)
  • optional: 2 scoops brown rice protein or super pea protein isolate (or mixture)
  • pepper

Procedure:

  • wash the potatoes, cut them in small pieces and boil them
  • meanwhile cut onion, chilli pepper and garlic – fry them in the oil in a pan
  • add the kale and bell pepper and mix everything nicely together
  • when the potatoes are soft, turn of the heat, pure the water away and add the soyjoghurt
  • with a masher mash the potatoes until you have a consistency you like
  • crumble the feta into the mixture, add the kalemixture as well as the remaining ingredients  and mix everything together
  • Enjoy !!!
