Ingredients ( 4 servings – each around 650 kcal):
- 1 kg Potatoes
- 300g kale (fresh)
- 200 g Feta
- 350 g Soyjoghurt
- 5 garlic cloves
- 1 onion
- 20 g olive oil ( 2 tablespoon)
- 1 Bell pepper
- 1 Chillipepper
- 60g sundried tomatoes without oil (miced)
- 60 g Macadamia (minced)
- optional: 2 scoops brown rice protein or super pea protein isolate (or mixture)
- pepper
Procedure:
- wash the potatoes, cut them in small pieces and boil them
- meanwhile cut onion, chilli pepper and garlic – fry them in the oil in a pan
- add the kale and bell pepper and mix everything nicely together
- when the potatoes are soft, turn of the heat, pure the water away and add the soyjoghurt
- with a masher mash the potatoes until you have a consistency you like
- crumble the feta into the mixture, add the kalemixture as well as the remaining ingredients and mix everything together
- Enjoy !!!
