This recipe came up out of a fun situation. Elte and me had made a list of meals for  this week, I though had changed to days, when we both came home from our trainings we were going to make dinner. As usually who is home first starts…… somehow we lost track of what we had in the fridge and not all “planned” ingredients were there anymore. But it is not that our fridge was empty no just the “right” ingredients were missing. But this was no porblem for us and shortly after some rethinking the following recipe was created and we both really liked it.

Ingredients(4 servings – around 700kcal:

  • 200 g Buckwheat
  • 500g cooked red beat
  • 350 g Veggi Pieces
  • 1 onion
  • 1 chilli pepper
  • 1 courgette
  • 1 brokkoli (cooked)
  • 1 medium apple
  • 1 bell pepper (red)
  • 2 tablespoon olive oil
  • 60 g Almonds
  • 40 g Cream cheese
  • 260 g Skyr/ Quark
  • pepper
  • salt


  • cook the buckwheat
  • meanwhile cut all vegetables and start frying onion and chilli pepper
  • add brokkoli, bell pepper and courgette – keep on a low heat
  • when the courgette seems to be soft add red beat,veggie meat,apple, almonds,cream cheese, skyr, salt and pepper – mix everything well
  • in the end add the cooked buckwheat and mix everything well together
  • Enjoy!!!
