Ingredients( 4 servings-eacha round 625 kcal):

  • 4 Potatoes (around 800g )
  • 200g Carrots
  • 300g Tomatoes
  • 240g FreshSpinach
  • 200g Cottage Cheese
  • 360g minced vegetable meat (tofu or soy based)
  • 60g Cashews (minced)
  • 110g sliced goatcheese
  • 1 tbsp. olive oil
  • pepper
  • italian herbs

Procedure:

  • Preheat oven to 180°C
  • boil the potatoes until they are still slightly hard
  • meanwhile cut onion,carrots and tomatoes
  • fry first the onions then add tomatoes, carrots and vegetarian meat and season with italian herbs and pepper
  • turn off the heat of the vegetables and add the cottage cheese
  • slice the boiled potatoes and place 1/2 on the bottom of a oven dish
  • next layer will be half of the spinach followed by the tomatoe mixture
  • to finsih it up another layer of spinach and then the potaoes
  • on top of the potatoes spread out the goat cheese and as the highlight place the cashews on top
  • put the oven dish for 30 min in the oven
