Curry with Mango

Ingredients( 4servings around 750 kcal) :

  • 150 g whole grain rice
  • 1 eggplant
  • 1 brokkoli
  • 2 mangos
  • 1 bell pepper
  • 300g Cherry tomatoes
  • 1 can coconut milk
  • 1 can coconut milk light
  • 320 g vegetarian chicken pieces
  • 1 onion
  • 1 chilli pepper
  • 60g cashew nuts
  • 70g red thai curry paste
  • 150 ml lemon juice
  • 1 1/1 teaspoon coconut oil
  • 2 tbsp lemon gras powder

Procedure:

  • cook the rice
  • cut the onion and chilli pepper – fry it in the coconut oil
  • add the vegetarian chicken (might need to cu tit in smaller pieces)
  • when the vegetarian chicken have turned slightly brown add the curry paste, coconut milk and lemon juice and stir – keep on until slightly boiling
  • cut the remaining vegetables and cook the brokkoli
  • add the lemon gras powder and vegetable to the frying pan
  • cut the mango and add as well
  • in the end add rice and cashews
  • let the curry sit another 15 min on a low heat
