Filled Eggplant with Sweet Potato

Ingredients (4 servings around 750kcal) :

  • 4 big eggplant
  • 360 minced vegetable tofu
  • 4 sweet potatoes
  • 180 g Pecorino
  • 1 bell pepper
  • 1 courgette
  • 1 onion
  • 1 chilli pepper
  • 2 tbsp olive oil
  • pepper, paprika powder


  • slice the sweet potatoe and mix it with some spices and 1 tbsp olive oil
  • spread them over a baking sheet  but leave some space for the filled eggplant on the same sheet
  • head the eggplant gently and take out the inside of the eggplant so they have a hole in them
  • slice the bell pepper, courgette, onion and chilli pepper
  • fry the onion and chilli pepper in the frying pan
  • add the minced tofu followed by the bell pepper, the flesh of the ggplant and the courgette
  • slice the pecorino in small dices and add to the mixture
  • take each eggplant and fill it with the mixture, you wont use all the filling so u have some side dish left
  • bake the eggplant and sweet potatoes for 30 min int he oven by 175 ° C
  • after 15 min turn the sweet potatoes
